I love a crispy, chewy batch of oven roasted chickpeas. I love it even more when they taste like Old Bay seasoning. It’s like eating steamed crabs in Baltimore again (back before I became an herbivore), but it’s a fast, inexpensive, and easy chickpea snack. No shell cracking required.

You can use any seasonings you want on these chickpeas, but I love Old Bay for it’s addictive flavors of celery seed, salt, black and red peppers, paprika, and mustard. If you haven’t tried Old Bay before, what the heck are you waiting for!? You can get a monster tin of it here.

You only need 3 ingredients to make these crispy chickpeas:

  • chickpeas
  • Old Bay seasoning
  • olive oil

I had cooked up a batch of chickpeas in the Instant Pot earlier in the week and was almost out of them when the craving for these oven roasted beauties struck. If you don’t have freshly cooked chickpeas that’s fine! You can just as easily use a 15 ounce can of chickpeas here rather than cooking in bulk.

These chickpeas are easy to make in just a few steps.

First, rinse and drain the chickpeas.

Next, spread the chickpeas out in an even layer on a parchment paper lined baking sheet and bake in the oven at 375°F for about 30 minutes. Bake before the seasoning is added you ask? Yes! I learned this trick from Sam over at her blog, It Doesn’t Taste Like Chicken. Baking before seasoning helps ensure the chickpeas get crispy without burning the seasonings. Brilliant!

Spread the chickpeas in an even layer and bake for 30 minutes

You’ll want to stir or shake the tray about halfway through baking to ensure even cooking. After 30 minutes, take the sheet pan out of the oven and dump the chickpeas into a mixing bowl.

Toss the chickpeas with the olive oil and Old Bay seasoning and stir with a spatula until all the chickpeas are coated in the mix. Hubba hubba.

Make sure to stir well so all the chickpeas are coated!

Now that the chickpeas are all coated in deliciousness, it’s time to get them back on that pan. Spread the chickpeas out in an even layer on the baking sheet again, and return to the oven for another 10-15 minutes.

At this point, the chickpeas should be crispy but a little chewy. They’re so delicious, we finished the entire batch almost indecently fast in just an hour or two! They make a delicious salad topper but are also fantastic eaten straight off the pan!

Ingredients
  

  • 1 ¾ cups cooked chickpeas rinsed and drained
  • 1 tbsp olive oil
  • 1 tbsp Old Bay seasoning

Instructions
 

  • Preheat oven to 375°F.
  • Line a baking sheet pan with parchment paper. Rinse and drain chickpeas. Spread chickpeas out on baking sheet in an even layer.
  • Bake chickpeas for 30 minutes, shaking and stirring the pan once halfway through to ensure even cooking.
  • In a mixing bowl, stir together olive oil and Old Bay seasoning. Add chickpeas to the bowl and stir well with a spatula. Make sure every chickpea is well coated.
  • Return coated chickpeas to baking sheet, spread in an even layer, and bake for another 10-15 minutes.
  • Enjoy this addictive snack!

Notes

You can substitute a 15oz/ 400g can of chickpeas for the 1 3/4 cups.
