“Easter Eggs,” aka No Bake Carrot Cake Bites!

Carrot cake. Is there a dessert that is more quintessentially symbolic of both springtime and Easter? I think not. A close runner up would have to be anything with lemon, but today we’re talking carrot cake. And there is no easier (or faster) way to enjoy carrot cake than by making these no bake carrot cake bites!

While it hasn’t felt particularly spring-like here in the PNW with our recent cool, rainy, and snowy weather, we did finally get some sunshine today. Our cat, Kib, thoroughly enjoyed her walk around the garden this morning and lounged among the strawberry plants. Here she is soaking up some rays. Happily, the strawberry plant underneath her went unscathed.

Even if it doesn’t stay sunny outside, these no bake treats offer a bright and sweet taste bursting with the fresh flavors of spring.

Made in a food processor, these healthy treats come together in less than 10 minutes, and they’re so delicious they may disappear even faster than that!

These carrot cake bites are a healthy vegan treat with wholesome ingredients that taste so good you’d never realize they’re also good for you. They contain:

  • Finely shredded carrots- great source of beta carotene and fiber
  • Dates- high in fiber, antioxidants, and minerals, including manganese, copper, magnesium, and iron
  • Unsweetened coconut flakes- another source of healthy fiber, as well as manganese, iron, and zinc
  • Walnuts- antioxidants, Omega-3s, and fiber
  • Raisins- antioxidants, fiber, iron, and calcium
  • Cinnamon, Nutmeg, and Ginger- delicious spices that offer brain-boosting health benefits

When you’re making these no bake carrot cake bites, be sure not to over-process your ingredients. You want a dough mixture that can hold together, but not a paste.

My husband named these glorious carrot cake bites “Easter Eggs,” which I love, and that is now their official title.

Easter Eggs, aka No Bake Carrot Cake Bites

These sweet and bright carrot cake bites taste like the cake we all know and love, but in a convenient no bake form with nutritious and wholesome ingredients.

  • Food Processor

Ingredients
  

  • 1 cup finely shredded carrots, lightly packed (1-2 carrots) 115 grams
  • 1 cup packed and pitted medjool dates about 10 dates, 164 grams
  • 1 cup walnuts 100 grams
  • ½ cup shredded unsweetened coconut flakes 35 grams
  • 2 tsp orange zest can use up to 1 tbsp, depending on preference
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp fine sea salt
  • ¼ cup coconut flour 30 grams
  • ¼ cup raisins 50 grams

Instructions
 

  • Finely shred carrots in a food processor and set aside.
  • To the food processor, add the walnuts, orange zest, vanilla, spices, and salt. Pulse until the texture resembles crumbs.
  • Add dates to the food processor with the nut mixture. Pulse a few times until the dates are broken up and mixed with the nuts.
  • Add carrots and coconut flakes to the food processor and pulse to combine. Do not over-mix, you want some texture to remain.
  • Now add the coconut flour and raisins and pulse a few more times until mixture is combined. You may need to scrape down the dough so everything is mixed.
  • Dump mixture into a bowl and roll into 10-12 balls. They are delicious plain, but you can also roll them in coconut flakes for extra decoration!
  • Enjoy! Store in the refridgerator for up to 3 days.
